It is tough, you are right. We can't put forth the effort and discipline till we make up our mind to really "do" it. I yo-yo diet. When I fall off the wagon sometimes it is a long time, even up to a year before I can find my way to "make up my mind" again to diet. When I am in that place I search my mind and just can't find the will to do it. I keep asking myself where do I find the "will"? It's not always the same reason that I am able to start again. This time in 6 or 7 months I went from a size 6 to over a 12, at only 5' tall. I was sick of how I looked and none of my clothes fit. When I am dieting, if I have a splurge day sometimes I can go directly back to dieting the next day. I know of two times I had a dessert and went (diet) berserk for a year before I could capture the "will" again. You started loosing. Now you have to decide which way to go. Do you want to double down, bite the bullet, and suffer being hungry for a time while you shrink your stomach to gain a trimmer body, or do you want to suffer the regret of giving up for now until you can gain the will to do it because you are sick of the status quo? We who know what it's like can love you either way. By the way, if you are eating high carbs your body is used to running on glucose (sugar) and you will feel more hunger when you diet.

I'm also at the time when no workout, eat anything I want like junk food but I'm still on track to maintain as long as I'm not surplus in a day I'm okay to eat anything, that's normal I guess, at least don't give up to reach your goals even it takes time

It is 100% a fact that you can absolutely "do this." Your body is designed with all the tools you need to reach your goals.
When I'm feeling less motivated, I find it helpful to lean into the healthy choices that I used to enjoy before I knew they were healthy choices. This helps me to enjoy the journey more, and focus less on the destination.

I get it. I’m the same way some days. I’m like what’s the point. And then other stuff happens in my life that is difficult and it all seems like too much. I’m here honey.

The feeling beat might just be lack of sunshine ☀️
I always feel worse when it’s cloudy and cold for several days in a row.
Maybe take a vitamin D supplement to help w feeling the blues.
As for food, a small amount of dark chocolate releases “happy” endorphins. Make sure you are getting higher protein w snacks or meals, might give you more needed energy.
Take one day at a time❣️

You can do it. Just keep at it and think how you want to be healthy. When I want to give up I think about my unhealthy patients and how they're in and out the hospital and they don't have much of a life and believe me I see people in their 30s and 40s that are unhealthy and don't have much of a quality of life
