This time I roasted 2 sweet potatoes 2 carrots1 bell pepper 1 pkg shiitake mushrooms- 4 cloves of garlic 1 Vidalia onion-with 4 oz of Mediterranean feta herb cheese in the middle. I love doing this makes me 4 meals I roasted up a pkg of tofu 4 protein

Yes I was going to add depending on how many veggies I do I will add a bag of steamed cauliflower rice at the end😊
