Dinner time!!! Smokey Cauliflower Grits with lemony seared jumbo shrimp. Made a simple wine sauce to drizzle on the top.

I take a cauliflower head and get it shredded. Put all that in a pan. Start cooking it. I add 1 tbsp of ghee to the cauliflower and 1 tbsp of chicken paste(Better than Bouillon). Keep stirring so it doesn't burn. I then add a can of non-fat evaporated milk to the cauliflower with 1 tsp of garlic salt. Keep cooking it down. That liquid needs to cook the cauliflower but also evaporate.. once the cauliflower starts to get tender I add 1/3 block of reduced fat cream cheese. Cook until fully melted. Finally add 1/3 block or 1 cup if shredded smoked Gruyere cheese. Cut off heat, stir in until melted. Let sit for 15 minutes then enjoy.

I tossed in very little olive oil and 1/2 tsp of Cajun Seasonings some shrimp with the tails on. The seared till done in a hot pan. Removed the shrimp. To that same pan I added 2 tbsp of butter, 1/4 cup of lemon juice, 1 cup of chardonnay and whisked for about 5-7 minutes. Added about 1/2 cup of heavy cream and contrived whisking to combine.. Served over my cauliflower grits and shrimp
