Not really seeing any changes lately... I'm in a big calorie deficit, but weight loss is not happening... maybe my body is adapted to a low calorie diet?

It's going slow, but it's going. If you looked at it on a weekly bases, it would look like you are losing every week. The scale fluctuates constantly. Just keep at it. Drink your water. Be active! Watch your sodium intake. Track your food honestly. Watch those bites, licks and tastes (they add up).
