The left one is 100% white (I’d better avoid it,) and the right is 100% whole wheat so that’s for me 😋 I start with 200g of a very bubbly starter in 525g room temp water then cut it in half so I can add 350g of white plain or bread flour to one and whole wheat equivalent to the other. After an hour I add 20g of kosher salt to each and then start the punching/stretching/rising process. If you have any tips or ideas I’d love to hear them, I’ve got my base routine down so I think it’s time to shake things up!
