Dried sausage made today. Shown below, hanging in the sun to dry. Made it from 100% lean meat, so it may turn out like jerkey. At least I can eat this one while in weight loss mode. Added a good splash of Tequila in this one. 😉

My rookie guess recipe was:
1000 gram Lean pork
30 gram Himalayan Salt
30 gram Kikkoman Soy Sauce
30 gram Tequila
13 gram BBQ Pork Spice (no addictives)
2 gram Liquid Smoke.
Seem like too much Soy Sauce. 20 gram probably better. 3% salt is Salami strength, and with the Tequila it should be safe to eat.

FullaBella Appreciate that. Thank you. Spent a good amount of time reading about how they did old-time preservation of meat. Before sweet, grains and chemicals was available. Feel good to have a new hobby that reduces the food budget, and bring more flavor to it.
