Having a difficult time logging dinner that hubby is preparing need advice. States he is cooking yuca con mojo and Cuban mojo chicken. He went to Florida recently for work and is now obsessed with latin/Cuban food. I am just glad I don’t have to cook today.

I usually search for a recipe or restaurant dish online and then ballpark the calories based on the ingredients. For instance, i make white chicken chili but am too lazy to calculate it. There are a million recipes online. So knowing i make mine on the low-calorie side, i just pick one that is in the middlr, calorie-wise. It is an inexact/lazy way to do it, but it works for me.
