The beginnings of dinner tonight. It's one of those nights when I had to open the fridge and the freezer and see what there was that NEEDED to be cooked.
We ended up with spaghetti squash, split in half and microwaved face down one half at a time for 8 minutes each. Scoop out the strings and toss with butter and Parmesan cheese. Season with salt and pepper.
I also found mushrooms that if I didn't cook them soon I was going to have to toss them. So put them in a bowl drizzled with olive oil, salt and pepper and thyme, placed them on a small sheet pan and roasted them at 375 degrees until browned and soft.
Coming up...really basic roasted chicken wings and oven browned potatoes with garlic and rosemary...
